First, something you must know about me: I will never give up dairy or gluten. Ever. I say this because there are a lot of food movements out there and I’d like to ward off any crazy ideas about what should be in my cupboard. These two food groups bring me such joy that without them, I simply do not feel I could be myself. I would be another, unhappier version of me. Genetically, I was made to run on bread and cheese, like my grandpa’s diesel Mercedes was made to run on, well, diesel.
It was a loud car, but it lasted for decades.
Maybe it’s something about being Danish?
American cheese + peanut butter on Ritz
Anyway, as a high school student I was scouring the fridge for an after-school snack one day. Often I’d turn to cereal (with cow’s milk, of course). But this time I wanted something new. So I made a discovery that I am forever grateful for: Peanut butter and cheese on bread. Or crackers.
It can be smooth peanut butter, or crunchy. The cheese should be orange, preferably a variation on cheddar, but American is fine too. Yes, I said it, American Cheese. You can also use spreadable cheddar. I like Kaukauna, although I think it was called something else when I was younger. Ritz is the perfect accompaniment.
Why eat mindfully?
I find that this bread and dairy delight is best eaten while standing over the kitchen sink. My friend calls this Bachelorette Frigidaire style eating, of which we are both certified practitioners. And yes, this combination of food stuffs is fine as a meal substitution.
